Our Newest Challenge

We can't claim the name Hyde Park HEROES if we don't awesomely take on challenges, right? RIGHT! So our newest self-inflicted challenge? Living on a budget.

I know, I've written about budgets before. Multiple times, actually. But now we're taking it to a whole new level. Not just "track what you spend" but "take out only a certain amount of cash every 2 weeks and only use that." And yes, there's this stuff called "cash" and "coins" that are not made out of plastic, are considered legal tender and have pictures of dead white guys on them. It's the wave of the future, I tell ya! Who comes up with this stuff?!

So the plan now is to see how well we can do with this set amount of cash. It means actually thinking before plopping down a couple hundred for new clothes (actually, I can't remember the last time I did that) or having multiple dinners out. And we're not doing this because we're dangerously in debt or because we think credit cards are completely evil- though they're most definitely NOT your friends. We're doing it because, as I've said before, we believe that how we spend our money matters. Consciously choosing to take only a certain amount out and using only that means thinking more seriously about where it's going. It means building in, even if just for another second or two, a pause and a reflection. "Is this what I want to spend my money on? How does it reflect what I support and believe?"

It's most certainly not going to be easy. It's not a lot of money. And I do quite enjoy spending money on non-necessities (this is not to say we are cutting all non-necessities, but we will be spending less on them). It's a challenge that we believe will make us live more responsibly and will make us better stewards of what's entrusted to us. Let's see what happens.

Friday Round-Up

Praise the Lord, it's Friday! Here's what happened this week.


1. I somehow pushed the cork of our wine bottle INTO the bottle, instead of pulling it out. What can I say? I can do amazing things. I also sprayed red wine all over my white shirt in the process. Awesome!!

2. I drank 20 full glasses of water at work over the course of the week.
3. It snowed. Again.
4. It was butt cold. Again.
5. I finally got a new pair of jeans that look halfway decent.
6. I learned who invented the stoplight. (Thank you, Breakthrough youth Black History Month celebration!)
7. I made an awesome PowerPoint.
8. I successfully kept myself from mindlessly watching TV. We did watch Lost, but that's not mindless. AND, Lost (and new episodes of The Office) are part of our Lenten agreement with God.
9. I purchased our tickets to DC for Easter.
10. I arrived EARLY to work 3 days.
11. I almost ran out of gas twice.
12. I brought my lunch to work 4 out of 5 days. And the other day doesn't count because we were celebrating all the February birthdays.
13. I added 30 people on my LinkedIn profile in an office competition. And I would just like to say that what should matter is how many you have, not how many you can acquire in two weeks. I'm just saying.
14. I did the "2:30 Candy Dance" around the office. Don't ask. It's sorta scary. And there might be children watching.
15. Umm...probably lots of other stuff but those are the standouts.

Ok, so when I list it out like that, it doesn't really amount to much, does it? But hey, it's the small victories, right? RIGHT?!

Move Over Bobby Flay


Actually, I'm not really a big fan of Bobby Flay. Not sure why...maybe it's that he's so...everywhere. He's the poster child of the Food Network. Throw Down with Bobby Flay. The Life and Times of Bobby Flay. Iron Chef Bobby Flay. Like Rachel Ray. But anyway.

With the long weekend, I was able to spend a significant portion of my time cooking. And in case you don't know me by now, I love cooking. Love it. I love making things up as I go, like my new wholewheat carrot muffins. Or my pork tenderloin recipe. And so, I give you my...

stuffed poblano pepper with homemade tortilla chips and a fresh tomatillo sauce (salsa verde)



It looks delicious, doesn't it? And it was, my friends, it was. And here's the great thing: it's healthy (or, I should say, not as unhealthy as a lot of Mexican food)! Those chips you see? They're baked. Yep. Small corn tortillas, cut into slices, with just a tiny bit of olive oil and kosher salt. The poblano pepper? I "roasted" it over our stovetop (ie held it over the open flame and rotated it) and then stuffed it with a very spicy, very lean ground beef, green chiles and my version of a Spanish rice- no cheese necessary. And of course the piece de resistance, the tomatillo sauce. Hyde Park produce had beautiful tomatillos (which are technically out of season, but...) that I just had to grab them up. Man, it was good.

I've yet to find a healthy, authentic Mexican restaurant in Chicago (minus Rick Bayless, who we simply can't get reservations for and usually can't afford, though he's amazing), so it's nice to know that I can cook up my own, healthy version of some of my Mexican food favorites. Now it's on to the margaritas...

It's Practically Summer

Have I told y'all about Hyde Park Produce? Oh, right, yes. Just every other post. But in case you don't remember, it's one of the best produce stores ever!! EVER!! As long as you don't buy the expensive organic other stuff (who needs organic flaxseed boxed macaroni and cheese? Apparently lots of people in Hyde Park). For that we go to the hell hole that is Village Foods. But I digress.

Last week I went into HPP to get a few vegetables for the week. (By the way, I have successfully fed M and myself on broccoli, canned tomatoes, rice, zucchini, squash, a frozen chicken breast and peppers pretty much this whole week.) Anyway. When I walked in on Wednesday, my heart stopped for a second.

A PINT OF STRAWBERRIES FOR $1.99!!!!!!!

YESSSSS!

Not only were they cheaper than I have EVER seen them, they also tasted so amazingly great. Sure, there was something deep, deep down inside of me that thought, "Hmm. I don't think these are in season and I'm supposed to care about that" but that thought was quickly replaced with, "Mmmmmm."

Sometimes a girl's gotta do what a girl's gotta do. Now I'll watch the snow fall as I munch on my summer treats.
